As a fortunate guest, I had the pleasure of joining a select group of individuals to partake in this culinary and artistic journey. Alongside Madeline Slattery-Spark, Victoria Latu, Grace Ireland, and Hope Mancer, we eagerly awaited the unveiling of this unique experience.
The High Tea menu at Pullman Melbourne is a work of art in itself. Combining culinary expertise with artistic flair, each delicacy was meticulously crafted to create a feast for both the eyes and the taste buds. From delicate finger sandwiches filled with gourmet ingredients to oysters, sumptuous pastries and desserts, every bite was a delightful surprise.
But what truly set this High Tea experience apart was the expertly curated gin cocktails provided by Little Lon Distillery. Each cocktail was thoughtfully paired with the delectable treats, enhancing the flavours, and elevating the overall experience. The combination of botanical-infused gins and exquisite bites was a true testament to the dedication and attention to detail put into this extraordinary event.
As we indulged in the culinary delights, we were also invited to view art by talented local artists. Their creativity unfolded before our eyes, adding another layer to the already immersive experience. The combination of flavours, artistry, and impeccable service transported us to a world of luxury and sensory delight all with city views as we were located on the 15th floor.

Guests are invited to immerse themselves in a sensory adventure like no other, starting from the moment they step into the iconic Elevate Lounge.
With tickets prices at $120 per person, attendees on the 11th of November will enjoy a 4-course High Tea menu as well as an extraordinary gin pairing for each course by Little Lon Distillery Gin, adding a touch of effervescence to the high tea experience. The 15th floor vantage point provides breathtaking views of Melbourne’s city skyline, creating an ambiance of sophistication and exclusivity.
What truly sets this experience apart however is the culinary artistry curated by Head Chef Ashlee Chapman. Guests will indulge in a menu inspired by the hotel’s vibrant new murals, created by four renowned Victorian female artists including Lisa King, Minna Leunig, Prudence Caroline, and Justine McAllister. Each dish is a masterpiece, reflecting the creativity and passion of these artists, bringing their artworks to life on the plate. Ashlee elaborates, “When creating this menu, I was inspired of course by the artwork itself from a visual perspective, but also from the feeling the artworks invoked. For example, Justine’s equine inspired mural made me think of American classics like Waldorf and smoked trout, while Minna’s work had me draw from local Australian inspirations resulting in dishes that celebrate the freshest local ingredients such as bush tomato sausage rolls, lemon myrtle prawns and Tasmanian salmon”.
