Ah Shucks, This Melbourne Bar Is Serving Up Botanical Oysters and We Simply Can’t Say No!
This salty treasure of the sea is served on a bed of juniper dry ice, inspired by the first French artisanal gin.

Melbourne’s decadent new rooftop venue, Fable, is celebrating the lead-up to Summer by experimenting with flavours and texture for a sensory dining experience. The warmer weather is reason enough to revel in the botanical based spirits emerging on the scene, which is why Citadelle Gin has taken over the establishment to bring an experience that you’ll adore.
Peppering the place with props that will have you thinking you’ve stepped into a real-life scene from the French Riviera. Upon entrance, you’re welcomed by a neon-lit green wall, and as you absorb the stunning 180-degree views that stretch across the city skyline, you can whisk yourself away to the seaside (or at least, your ‘gram will) and drink and dine in the boat setting – making the whole dining occasion that much more grammable. This Magnifique setup is met with custom Gin de France menus featuring all things Citadelle Gin – aperitifs through to appetisers, and adventurous ones at that.
A divisive dish that oftentimes demands a more sophisticated palate, oysters are associated with some of the finer things in life, and Citadelle Gin x Fable are bringing the theatre. Inspired by the much-loved cocktail, French 75, combining gin, citrus, and champagne, the Appellation Oysters with French 75 and Merlot caviar exists on this limited-time-only menu as a contemporary, deconstructed, foodie take on the classic serve. Think four freshly shucked Boomer Bay oysters, sprinkled with French 75 and merlot caviar pearls, on a bed of juniper aroma tea dry ice.
Collaborating on an entirely new cocktail menu, Citadelle Gin worked alongside Fable’s lead mixologist, Alessandro Nardini, to introduce this premium spirit to consumers in a really creative way – pairing a gin & tonic with a selection of vegan cheeses. With a list of beverages most suitable for a long lunch, Fable intends to whisk you away to the French Riviera with their take on the French 75; Le French 25. Citadelle Original Gin, strawberry verjuice, chamomile tea, riesling, clarified lemon juice, and fizz the Le French 25 is a drink best sipped on an open rooftop with city skyline views. You’ll also find a zesty Martini de la Citadelle and fresh G&T lemon with peppercorn on the menu too.
