Hot on the heels of opening the doors to The Sebel Melbourne in Moonee Ponds comes the launch of Saros Bar & Dining; the ground floor, New York styled restaurant by JMS Hospitality. With a European menu favouring a wine and tapas concept the establishment is sure to be a welcome delight to Melbournian’s emerging from iso. Set on the ground floor in the burgeoning North-West of Melbourne this new hotspot boasts big apple styled booths, an enticing menu to tantalise the taste buds with the centrepiece being the marble bar that oozes sophistication, style and class.
“We were scheduled to open on March 23rd, 2020. On March 22nd the government made the announcement regarding operating changes for bars, restaurants, and cafes. Based on this announcement, instead of opening, we decided to wait until we could provide our guests with our vision: a venue that brings the next level dining experience to Moonee Ponds.” Said Belinda Lee, General Manager, Sebel Moonee Ponds, and Saros Bar & Dining. “With opulent chairs, VIP Booths, a large selection of wine and spirits, cocktails, and a delectable menu, our guests will be wowed! The team have been working hard to meet the government requirements to ensure the health and safety of our guests and staff. We are excited and can’t wait to welcome our first guests.”
JobKeeper was good news for the business with employees able to hold on to their jobs during the lockdown. The time out enabled staff and Executive Chef David Fernandez to create an exciting dining out experience post-pandemic. The bar and restaurant will open on Wednesday, June 3 with a delicious menu for breakfast and dinner including treats such as Fire-Grilled Wagyu Skewers, Fresh Oysters, Venison, and Wild Mushroom risotto and a plethora of delights that will get any foodies mouth-watering. Saros means a measure of time and ironically it would seem the launch is all about just that. It’s been 18 years since JMS Hospitality housed a business in the area and although postponed, the time spent waiting to launch has proven fruitful with a truly joyous experience promised to guests.
The restaurant and bar will open from Wednesday – Sunday for dinner only and in line with government regulations will seat 20 people per session. Bookings will be essential and seatings available will include 5:00 pm, 6:30 pm, and 8:00 pm. Locals itching to get out of the house and back to a semblance of ‘normal’ will experience exceptional service and enjoy delicious food complemented by a carefully selected beverage list. The menu has been carefully created and designed to please any palate with a variety of earthy, full-bodied, fresh Mediterranean-inspired dishes. Options include vegan, vegetarian, gluten and dairy-free, and a full kids and sharing menu. Distinctive flavours include house-smoked, cured, infused, marinated and charred delights.
“Creating the restaurant has been like a blank canvas for a painter”. Said Executive Chef, David Fernandez. “There has been so much excitement in creating everything from scratch; from new equipment to building the team to connecting with new suppliers. Creating the dishes has been like art itself and we hope many of these will go on to become signature menu items.”
Complementing the menu is an international wine list and a large selection of spirits including over 20 different scotches, 10 gins, 10 vodkas, and an extensive range of liquors. Cocktails will be a speciality with Cosmopolitans and Martinis the drink of choice. It’s safe to say that Saros Bar & Dining won’t be your standard ‘local’.
The establishment is located in The Sebel Melbourne Moonee Ponds and is part of the JMS Hospitality Group. The restaurant will open on Wednesday, June 3 just as the State moves into stage one of lifting the lockdown. With the chic central bar, extensive wine and liquor offering the bar and restaurant is perfect for solo dining or a catch up with family and friends.
